Summer recipe: Cucumber and tomato salad

This is a great and light summer salad. I easily could have gobble the entire thing myself, but resisted and had only two bowls 😉

Ingredient list:

  • Two large tomatoes – seeded and cut into 1 inch “cubes”
  • One large cucumber – seeded and cut into 1 inch cubes
  • Sea salt
  • Black pepper
  • Garlic powder
  • Dried oregano flakes
  • Approx 1/8 cup Olive oil
  • 1 tbsp Spicy mustard
  • Juice of one-third fresh lemon
  • Rice vinegar (if on hand)
  • Caribbean pepper sauce (if on hand)
  • One cup chopped flat parsley
  • 1-2oz low-fat feta cheese

Combine the tomatoes and cucumber in a bowl with salt and pepper (to taste… I like LOTS). In a mixing cup whisk together Olive oil, spicy mustard, lemon juice, black pepper, garlic powder, oregano flakes. If you have, add in 1 tbsp of rice vinegar and a TINY bit of pepper sauce. Whisk together. Add to tomatoes and cucumber to desired amount of dressing. Mix in flat parsley and feta. Stick in fridge for at least half hour. Devour.
